	Emerald Lakes CAKES                               Mary is now making special occasion cakes. Whether you would like a gorgeous, tiered wedding cake covered in intricate lace or a fun birthday cake with special decoration for a special person, we can help. Pricing is based on the complexity of the cake and the time, ingredients, and special materials needed to make it. We can copy a cake you have found on the Internet, or you can tell us what you would like. Alternatively you can just tell us about the person and we can design a cake for you. For wedding cakes, we offer wedding cake design consultation at $35 per hour. We work with the bride and groom using special cake design software that allows you to specify the number of tiers, the type of decoration, the type of flowers, and the colours of those embellishments. If we do the cake, the consultation fee is refunded. We will provide you with a colour printout of the cake design that can be taken to the cake decorator of your choice. Please let us know at the time you book the appointment what type of designs and/or flowers you are thinking of so that we can make sure those designs are loaded into the computer. The cake above would be $270 for the basic 2-tier 11" & 7" cake for 45 people with $15 for the bow and embossed hearts plus $15 for the three roses on the bottom tier for a total of $300. The lovely lemon cake above is a 10" one tier cake which serves 17 to 24 people and would be $55 for the basic cake plus $15 for the bow, embossed fondant, and flower for a total of $70. For those wishing to keep costs down, we can provide the cake covered in fondant. A simple ribbon around the base and fresh flowers (supplied by the florist) can make a beautiful cake such as the one shown below.                     VARIOUS TYPES OF CAKES Specialty Cakes - A cake can be customized to suit the interests of the individual. The cake below was made for a Thunderbird enthusiast for his 66th birthday.* * Automobile cakes are only possible if the sugar artist is provided with a scale model and to scale drawings of the vehicle. Cakes for Specific Times of the Year - We can do celebration cakes for Christmas, Valentines, Easter or any special occasion. Below are some examples of Valentine cakes we have done. Butter cream Transfer - this is a technique somewhat like a mosaic where a pattern is filled in with butter cream and then placed as disc on top of the cake. The technique can be used to customize a cake to the individual's interests. Fondant - fondant is similar to marzipan, but without the almonds. It is rolled in a sheet and placed on the cake. A layer of butter cream is between the cake and the fondant. The cakes below were decorated either with fondant cutouts or bows underneath another layer of fondant. A variation of fondant can also be fashioned into flowers (see peony cake at top of page). We make our fondant from scratch (i.e. no preservatives). Small and Mini Cakes Cakes are not always large.
